Büel is a parcel of 20-year-old Chardonnay vines that Tom farms in the village of Wittnau. This site totals 2.5 hectares and features chalky marl soils over Jurassic limestone. It is aged on its lees undisturbed for 12 months in neutral 228L French oak barrels.
