From Muscadet, Minuit is a Folle Blanche that originates from vines on granitic soils in their first year of organic conversion. Manual harvest, slow pressing, and spontaneous alcoholic and malolactic fermentation are the same with Minuit as all the cuvées from this address. A Pétillant Naturel, it is bottled before the primary fermentation is complete and released without disgorgement. Aptly named after the French word for midnight, this delightful wine is perfect as both an aperitif or for late-night celebrations and sometimes both.
