With her years of experience consulting in Italy, Eliane Lafage is aware of the tradition of making sparkling wines by cooling the fermentation as it approached dryness and preserving the natural CO2 in the wine by allowing it to rest on its lees. This technique works perfectly with some of the vineyards she and her husband farm close to the Mediterranean. White varieties here can be harvested fully ripe but with a potential alcohol between 10-12º. Miraflors Blanc Frisant is an aromatic and mineral blend of Rolle, Muscat d’Alexandrie, Viognier, Sauvignon Blanc, Colombard, and Macabeu that is the closest thing we’ve tasted to Picpoul but with bubbles and beautiful aromas of flowers and pit fruits.
