The In the Hills Syrah comes from the higher elevation vineyard of the two, featuring a notably smokier, meatier, and more savory style than its blue-labeled sisters. This difference in character is largely attributed to the fierce winds and the deep silty loam and basalt soils found in this terroir. The cuvée is co-fermented with 6-8% Viognier, depending on the vintage. For élevage, 20-25% new French barriques and puncheons are used, with a minimum of 6 months in new barrels before racking into second-fill barrels for an additional 6-12 months of aging before bottling.
