Overview

An homage to his father, Jean-François Mérieau is primarily Cabernet Franc (around 80%) and Cot. Coming from vines that range in age from 35 to 50 years old the fruit is harvested by hand, destemmed and fermented in concrete by natural yeasts. The maceration lasts from 35-42 days with regular, manual punch downs. It is aged in French oak for 18-24 months then another 8 months in tank before bottling.
