La Bota de Palo Cortado 52 “Sanlúcar” is a groundbreaking contribution to the field of Palo Cortados from Jerez, a result of reflection of years and decades of experience by Eduardo Ojeda and his team. A wine that, regardless of its relative youth, lives up to the strict requirements of finesse, complexity, cleanness that must meet any wine belonging to this noble category.
Entirely proceeding from vineyards belonging to the same vineyard in Sanlúcar, and even the same vintage, is a Palo Cortado really young and fine, product of a selection of the best musts from Miraflores, aged in Jerez casks and Bordeaux barrels filled to ‘tocadedos’ to avoid over oxidation. For this release we have selected the contents of six ‘cannon’ casks, that previously had old Amontillado in them, since the excellence of the spirit of its former content has provided an extra touch of quality and depth to the final result.
In any case, it is fundamentally an oxidative wine, in which there was only a slight and natural and almost inevitable exposure to biological aging in tanks where the juice was waiting for the moment of being fortified to 17.5% alc. Right before the transfer to the ageing casks. It was exciting to see that even in near absence of Flor, the characteristic minerality of coastal Sanlúcar vineyards in this wine is transmitted via an organoleptic profile that evokes other wines from the same source: The 37 Bota de Amontillado, La Bota de Florpower MMX 44 and 53, as well as the various editions of La Bota de Manzanilla Pasada.
To be a Palo Cortado, its alcohol content is very moderate, 18%, but also alcohol is perfectly integrated and probably in a blind tasting it wouldn’t be an easy guess. A very drinkable and refreshing wine, while also long and complex; probably the best imaginable harmony for a long list of dishes of Asian cuisine, from India to Japan, stopping especially in the Southeast. A true delight of wine that keeps us excited.
