Press Review

There's ... more acidity and freshness, which results in a fuller wine with more complexity and depth, with more energy and purity of flavors and very fine, elegant tannins. This could very well be the finest vintage of Safrà to date

- Luis Gutiérrez, 2022 vintage

Overview

Spanish for saffron, Safrà is a wine that shows the growing confidence of Pablo Calatayud in the ancient stone lagars and subterranean clay amphorae present at Celler del Roure. Safrà is a blend of Mandó (70%), an indigenous grape of this part of Valencia, with another indigenous variety, Arcos (30%). Harvested by hand and partially destemmed, this cuvée is fermented by natural yeasts in stone lagars and stainless steel tanks and then aged for 6 months in amphorae. This is about as pure and naked an example of Valencian wine as one can find, showing a brightness of fruit and a forthright and alluring authenticity.
