Overview

L’Eloge de l’Ombre, or in English, in praise of the shadow, is a cuvée made entirely from old-vine Grenache planted on schist in the lieu-dit of La Rigole near the village of Saint Paul de Fenouillet. This 1 ha plot is north-facing, hence the shadow, and is used for both L’Eloge and as part of the blend of Grenache in L’Esprit du Temps. As this is a more ethereal and elegant style of Grenache, Gilles ages this cuvée in cement eggs rather than demi-muid or foudre.
